Ingredients - 60g buckwheat flour
- 47g almond flour
- 1/2 tsp soda
- 1/4 tsp baking powder
- 1/4 tsp salt
- 175g mushed banana
- 65g yogurt
- 50g oil
- 55g sugar
- 1 egg
- 1/2 tsp vanila extract
- 1 tsp rum
- 15g lemongrass
- 50g walnuts
Method- Preheat your oven to 180°C.
- Mix together flour, soda, baking powder, salt, finely chopped lemongrass.
- In another bowl mix together mushed banana, yogurt, oil, sugar, vanilla extract and rum.
- Combine dry and wet ingredients.
- Add chopped walnuts to the batter, mix and bake for 35-40 minutes.
I serve my banana bread with peanut butter and caramelized peaches, but it's really delicious even by itself.
