Here is one of my favorite ukrainian dish. Tender filling with cottage cheese and melting-in-your-mouth dough. You could make the dish sweet, but I'm at the salty side.
Ingredients
for the dough
280g flour 180g boiling hot water 2 tbsp oil 1/2 tsp salt
for the flling 400g cottage cheese 1 egg 2 egg yolks 1/2 tsp salt
Method 1. Mix flour and salt, pour in the hot water, add oil and start making the dough with a spoon. 2. Leave the dough for 15 minutes. 3. While the dough is resting we will make the filing. Mix all the filing ingredients together. 4. Roll out the dough until it's 2 mm. 5. Cut the dough into round shape pieces and put 1 tbsp of filing on each of them. 6. Close the edges, form the vareniki. 7. You could freeze them or cook straight away. Put vareniki into salted boiling water and cook for 5 minutes. Serve with a bit of butter and sour cream. Enjoy !
